Baked Egg Custard for Dan

Baked egg custard.

My husband Dan loves egg custard, and now that he is suffering from Parkinson's and has little appetite this is one thing he will eat.  Daughter Laura makes the most wonderful custard, and she usually keeps him supplied.  Today though he is out, so I decided to make some.  My first attempt.

Introduction

Easy Breezy Custard!
Number of Servings: 6

Ingredients

    2 eggs
    2 cups of warm milk
    1/4 tsp salt
    1 tsp vanilla
    1/4 cup sugar
    1 tsp of cinnamon (I substituted fresh ground nutmeg here.)

Directions

In an 8x8 baking dish, beat the 2 eggs. Add sugar, salt, and vanilla, and whisk together.
Adding 1/4 cup sugar to the 2 eggs that have been whisked.


Add vanilla and salt and whisk.
Warm milk in the microwave, then slowly add to the egg mixture. Whisk well. Sprinkle top with fresh grated nutmeg and bake at 350 degrees for about 35 minutes or until done in center.
Add milk that has been warmed in microwave and mix well.
Grate fresh nutmeg on top. 
Out of the oven.
A small serving for Dan.
I was not pleased with the texture of the custard.  It wasn't smooth and had a watery layer.  I think I perhaps should have placed the custard in a bath of warm water as it baked so it would have baked evenly.    The taste is fine.  However, I will try a different recipe and different technique next time.

My Mom used to make great egg custard, but she used individual custard cups, and she often made this for Dan when we visited her or when she was here.  I should have gotten her recipe and technique.  And of course, I could get Laura to show me how she makes such delicious custard.
